Baked Nectarine With Coconut Oil & Basil

  1. 2-3 Nectarines
  2. Pinch of coconut oil (enough to rub & coat nectarines)
  3. 2 tablespoons coconut water (more if needed)
  4. 2-4 large Basil leaves (or to taste)
Directions on how to make baby food:
  • Preheat oven to 350 degrees
  • Wash and peel nectarines
  • Cut squares of aluminum foil large enough to fully cover each nectarine
  • Place each nectarine in the center of each aluminum foil and run each one with enough the coconut oil to coat (note that coconut oil is solid when at room – or at cool – temperatures and will melt when heated)
  • Seal each nectarine with the aluminum foil and place on a silicone or parchment lined baking sheet
  • Bake for 30 – 35 minutes or until tender when pricked with a fork
  • Remove from oven and allow to cool just enough to handle
  • Unwrap each nectarine, core and place in the blender
  • Add basil leaves and two tablespoons of coconut water and puree
  • Continue to add one tablespoon of coconut water at a time, if needed, to reach desired consistency
  • Serve and enjoy!
