Veggie Soup

Ingredients:
  • One Fresh Bellies veggie puree
  • Approx. 2 cups chicken stock or light coconut milk
  • Kosher salt and pepper to taste
Directions on how to make savory yogurt:
  • Add chicken stock or coconut milk to the pot and bring to a boil (our personal favorite is coconut milk)
  • Lower heat and add our veggie puree of choice (e.g., Beets & Thyme or Carrots & Parsnips)
  • Stir with a silicone or wooden spatula and simmer until completely incorporated
  • Add kosher salt and pepper to taste
  • For added texture, add cooked quinoa or faro to the soup

Ladle into bowls and enjoy!
