Mango Blueberry Vanilla Pops

Mango Lassi is one of our favorite yogurt-based drinks. It’s perfectly balanced and the cardamom spice adds a nice fragrant zing to it. Partnered with sweet blueberries and tangy greek yogurt, this is one flavorful rainbow. While we find that the mango and blueberries are sweet enough, you can always add your sweetener of choice to adjust the taste.

Ingredients (makes six 3 oz. pops):
  1. 2 cups vanilla greek yogurt (we use 0% fat)

Mango Lassi Layer

  1. 1 cup plain yogurt
  2. 1/2 cup milk
  3. 1 cup chopped mango (peeled and stone removed)
  4. Dash cardamom
  5. 1/4 teaspoon agave syrup, coconut sugar or sweetener of  choice (optional)

Blueberry Layer

  1. 1 cup fresh or thawed frozen blueberries
  2. 1/2 cup plain yogurt
  3. 1/4 teaspoon agave syrup, coconut sugar or sweetener of  choice (optional)
Directions:
  • Blend all mango lassi ingredients in blender until smooth.
  • Pour into popsicle molds, enough to fill 1/3 of the way up.
  • Place in freezer for about an hour.
  • Meanwhile, blend blueberry ingredients in a blender until smooth.
  • When mango layer is slightly hardened but not frozen through, pour blueberry mixture into molds and place back in freezer.
  • After an hour, when blueberry layer is slightly hardened, pour vanilla yogurt into molds and fill to the top.  Place popsicle sticks into molds and place back in freezer.
  • Freeze until completely hardened.
